The perfect roast turkey
Turkey is the star of Christmas lunch, so don’t forget to save all the lovely cooking juices to flavour the gravy

Ingredients
  • 1 Asda Free Range Bronze Turkey, 4.5kg
  • 1 lemon
  • few sprigs thyme
  • 100g butter, softened
  • 2 onions

Method
1 Preheat the oven to 180C/160C Fan/Gas 4. Prepare the turkey by removing the giblets, then rinse it inside and out. Pat dry with paper towel. Cut the lemon into quarters and put in the cavity with the thyme.

2 Rub butter over and under the skin of the turkey.

3 Roughly chop the onions, leaving the skin on, and scatter in a large roasting tin. Put the turkey on top, breast side up.

4 Roast the turkey for 3 hours 40 minutes (for a 4.5kg bird). For a different weight bird, calculate the cooking time by allowing 20 minutes per 450g, plus an extra 20 minutes. Baste with the cooking juices every 30 to 40 minutes.

5 To test if the turkey is cooked through, pierce the thigh in the thickest part with a skewer. If the juices run clear, it’s cooked; if they are pink, return the turkey to the oven for another 20 minutes, then test again. Carefully lift the turkey out of the tin, tilting it so that any juices inside run out into the tin. Discard the onions and reserve meat juices for gravy – see recipe overleaf. Put turkey on a serving platter and cover with foil. Leave to rest for at least 20 minutes before carving.
