Vegetable chilli with brown rice
Suitable for vegetarians
Add crushed dried chillies for more fat-free flavour
Serves 4
Ready in 40 minutes
Ingredients
  • 1tbsp olive oil
  • 1 medium onion, chopped
  • 250g baby turnips, peeled and sliced
  • 1 small butternut squash, cubed
  • 2 x 400g cans Asda Chopped Tomatoes with Chillies and Peppers
  • 2tsp Asda Sweet Chilli Sauce
  • 100g fine green beans, halved
  • 2 x 290g cans Asda Chilli Beans
  • brown rice and coriander, to serve
Method
1 Heat the oil in a pan and cook the onion until soft and golden. Add the turnips, squash and chopped tomatoes, then cover and simmer for 25 minutes.

2 Add the sweet chilli sauce and green beans, and cover and simmer for a further 5 minutes.

3 Add the chilli beans and their sauce and simmer for 3 minutes. Serve with brown rice and garnish with coriander.
