Ingredients
- 2tbsp extra virgin olive oil, plus a little extra for brushing
- 1tbsp balsamic vinegar
- 1⁄4tsp Dijon mustard
- 1⁄4tsp Asda clear honey
- 125g Asda fine asparagus spears
- 40g Parmesan, shaved with a vegetable peeler
Method
1 Put the olive oil, vinegar, mustard and honey in a small bowl. Season well and whisk to combine.
2 Heat a griddle. Bend the stalks of asparagus until they snap and discard the ends. Brush lightly with olive oil and griddle until just tender.
3 Serve the asparagus drizzled with balsamic dressing and topped with Parmesan.
