Griddled asparagus with balsamic dressing and Parmesan
Suitable for vegetarians
Serve as a light summer snack or side dish
Serves 2
Ready in 15 minutes
Ingredients
  • 2tbsp extra virgin olive oil, plus a little extra for brushing
  • 1tbsp balsamic vinegar
  • 1⁄4tsp Dijon mustard
  • 1⁄4tsp Asda clear honey
  • 125g Asda fine asparagus spears
  • 40g Parmesan, shaved with a vegetable peeler
Method
1 Put the olive oil, vinegar, mustard and honey in a small bowl. Season well and whisk to combine.

2 Heat a griddle. Bend the stalks of asparagus until they snap and discard the ends. Brush lightly with olive oil and griddle until just tender.

3 Serve the asparagus drizzled with balsamic dressing and topped with Parmesan.
